Important Information

Do not substitute, subtract or add any ingredient to the recipes.

This is super duper chemistry that does not want to be altered in any way.

Bake all products in a range oven.

Turn off convection option for electric oven if possible.

If the element on the bottom of your electric oven is exposed, put aluminum foil on top of the bottom rack.

DO NOT USE A COMMERCIAL CONVECTION OVEN.

Brown Rice Flour Outside of Canada and the US

The brown rice flour in the recipes call for a ‘fine grind’ flour.

Bob’s Red Mill brown rice flour is a fine grind and can be found in major grocery stores and online in the USA

and Canada

If you cannot access this product, then use the brown rice that is available in your area. You might need to alter the lightness texture of the brown rice flour after your first attempt at making the recipe if the end result does not result in a light texture.

Please contact the companies directly if you have any questions about their packaging facilities and any cross contamination concerns

If your first try yields a light and fluffy product, then you are good to go!

If not, reduce the brown rice flour (your brand choice) and exchange it with white rice flour (not sweet white rice flour)

For example

Start with 10%

100 grams of brown rice flour now becomes 90 grams of brown rice flour.

Exchange that 10 grams of brown rice flour with white rice flour (not sweet white rice flour).

This now becomes your fine grind brown rice flour formula.

Make it in bulk for future recipes that call for brown rice flour.

If that still doesn’t yield a light enough texture, then try reducing it by 20%

If still not light and fluffy, then that brown rice flour brand won't work. You will have to start the process again with another brand. It will be worth it!
